The Benefits Of Carrots

We all remember our parents telling us to eat our vegetables. I have many memories of my parents passing out apple slices to my friends as we worked on our homework after school. As a child, apple slices as a snack seemed like a punishment. Why would I want to eat apples when other children received cookies and candy as after-school snacks? As I got older, my parents transitioned from apple slices to carrot slices. I hated carrots. I complained about this snack regularly, and I longed for the days of the apple slices. I vowed never to eat carrots as an adult.

I stuck to my vow during my young-adult years. I started eating carrots in my 30s, but I still didn’t like them very well. As I continue on my weight loss journey, I’ve been in search of new ways to prepare foods. Making food more interesting is a challenge for me. I tend to eat the same things over and over, so spicing up my meals is an absolute must. During my search, I came across the benefits of several different fruits and vegetables. I know fruits and vegetables are healthy, but I was surprised to find out just how healthy they were. Over the next few weeks, I’ll be sharing what I’ve learned. I’ll also include some of the recipes I’d like to try. I have a new understanding of just how important my food is for my health and nutrition. Health is a continuous learning process, and it’s a journey I look forward to daily.

  • promote better eyesight
  • prevent muscular degeneration
  • reduces the risk of a stroke

These are just a few of the many benefits of carrots. I never knew carrots were such a versatile food. People have always said carrots help with your eyesight, but I’d never heard of carrots preventing muscle degeneration. I want to give carrots another try, and hopefully I’ll have a better experience this time around. Today’s recipe is Zesty Lemon Carrot Salad.

10 mushrooms
1 teaspoon ground cumin

1 teaspoon ground coriander
1 teaspoon minced garlic
